Crock Pot Beef Stew

Beef was on sale at Meijer when we went grocery shopping Sunday so I bought a big chunk. Monday evening, I started preparing the ingredients and took out the big crock pot.
3 lbs beef, cut into cubes
4 medium potatoes, cut into cubes
2 medium carrots, sliced diagonally 1/2″ thick
2 stalks celery, cut into 1″ lengths
1 large onion, diced
1 can light red kidney beans, drained
1 tbsp dried Italian seasoning
salt & pepper to taste
Except for the last two ingredients, put everything the crock pot and just enough water to cover the beef & veggies. Turn the slow cooker on high. When beef is tender, season with salt & pepper.
I had it on high for the first 3 hours and turned it down to low overnight and left it there until dinnertime.
Very easy to make and the end result is absolutely delicious.
