Fish & Rice

I love tilapia but didn’t really appreciate it until I came to the US. I remember it being real cheap and fresh in the Phils. but here, a pound costs $4.99 at the supermarket. Sure, it’s already filleted but where’s the fun in eating that? Back home, we deep fried or grilled it and served it with a dipping sauce of soy sauce or patis with calamansi. There are crevices in the head that yield some yummy tasting meat.
Anyways, Meijer had them on sale a week or so back for $2.50 a pound so I bought 2 packs. I just remembered them yesterday so I hastily thawed a pack in the microwave, brushed each side with butter and sprinkled lemon pepper on them. Into the oven they went for 12 minutes at 350F. I rummaged through the pantry and found a box of Zatarain’s French Market Vegetables & Rice Mix. It turned out quite good.
Then, I realized I hadn’t baked cookies in a long time. Not for lack of ingredients but more because of laziness :D. I was going to just bake a batch of chocolate chip cookies but my son also wanted raisin cookies. So instead of making 2 separate cookie doughs, I used a third of the dough and put raisins instead of chocolate chips. He didn’t really care as long as there are raisins in there.
Oh, and I had a one-boy clean up brigade. The spatula wasn’t enough, he had to clean the bowl, too.
