Shrimp Fra Diavolo

Another quick fix which I remembered from an episode of Giada De Laurentiis’ “Everyday Italian.” I didn’t have all the ingredients so I made some shortcuts, tweaked it a little here and there…in short, I cheated :D.
1/2 lb. pasta (capellini, spaghettini or linguini)
1 lb. shelled & deveined shrimps
3 tbsp olive oil
3 cloves garlic, minced
1 medium onion, chopped
1-1/2 cups chopped tomatoes (from blanched and skinned fresh tomatoes)
1 tsp crushed red pepper flakes
1/4 tsp dried oregano
1-1/2 tsp dried basil leaves
1-1/2 tsp dried parsley flakes
Salt to taste
I’m sure this would have turned out better had I used fresh herbs instead of the dried stuff. (Note to self: Get going on the herb garden!!!)
Cook pasta according to instructions. In a saucepan, cook shrimps in oil until pink. Transfer shrimps to a small plate. Saute garlic, onions and tomatoes. Season with pepper flakes and herbs. Put shrimps back into the pan and add the drained pasta. Toss. Season with salt.
