Palabok

Last night was our pre-Christmas dinner with friends. We had the usual people over and one of the dishes that the Pinay wives wanted was pancit palabok. I forgot the spring onions but it didn’t matter…no one complained.
8 oz Pancit luglog noodles
1 pack Palabok sauce mix
fried chopped garlic
coarsely ground chicharon (pork rind)
tinapa flakes
hard cooked eggs, sliced
pre-cooked shrimps
spring onions
Boil water in a pot and cook the noodles in it for about 15 minutes. Drain and spread in a serving platter or bilao lined with foil. Prepare the sauce mix according to the directions in the packet. When cooked, pour evenly over the noodles. Sprinkle with tinapa flakes, chicharon and fried garlic. Garnish with shrimps, eggs and spring onions. Serve with calamansi or lemon juice.
