Fried Rice

When I’m craving for a one-dish meal, this is it for me. Long grain rice works best because they don’t clump together.
Ingredients:
6 cups cooled cooked rice
3 eggs, beaten
3 cloves garlic, chopped
1 small onion, chopped
1 medium carrot, chopped
1/2 cup sliced spring onions
1 chicken breast, cubed
1 lb cooked shrimps
1 cup diced kielbasa or smoked brats
4 tbsp soy sauce
1 tbsp sesame oil
2 tbsp water or chicken broth
In a small bowl mix together the soy sauce, broth and sesame oil. Set aside.
In a little oil, cook the eggs. When done, slice into strips and set aside. In a wok or a large frying pan, saute garlic and onions. Add the chicken and cook until done. Add the kielbasa or brats and carrots. Put in the rice, pour the soy sauce mixture, and mix until ingredients are well distributed. Top with the fried egg strips.
You can also include green peas but I forgot to buy another bag.
